PARMESAN ONION BAKE

(makes 6 side servings)

½ c margarine

5 sweet onions (such as Vidalias), thinly sliced

1 c Kraft® grated Parmesan cheese

36 butter-flavored crackers, crushed

2-3 tsp milk (optional)

Preheat oven to 325º F.

Melt margarine in skillet over medium heat; add onions and cook till transparent—DO NOT brown the onions.

Place half of the cooked onions in a greased 2-qt baking dish and top with half of the Parmesan cheese and half of the crushed crackers. 

Repeat layers.

Bake for 20-25 minutes. (Add milk to casserole if it appears dry)

Serve warm

She has crafted award winning poetry, and been published in trade specific magazines. Janet enjoys the outdoors by kayaking and hiking with her husband, and photographing nature. Author Thom Battisto's Favorite Recipe...

This is one of my many favorite Thanksgiving foods:

PUMPKIN CHEESECAKE

CRUST:

1-3/4 cups graham cracker crumbs

3 tlb brown sugar

1/2 tsp. ground cinnamon

1 stick melted butter

FILING:

3 8oz. packages of cream cheese at room temp.

1 15oz. can pureed pumpkin

3 eggs + 1 egg yolk

 1/4 cup sour cream

1 1/2 cups of sugar

1/2 tsp. ground cinnamon

1/8 tsp. ground nutmeg

1/8 tsp. ground clove

2 tlb. all purpose flour

1 1/2 tsp. vanilla extract

Preheat oven to 350 F.

Directions:
CRUST

In medium bowl, combine crumbs, sugar and cinnamon. Add melted butter then press crumb mixture flat into a 9" spring form pan. Set aside.

FILLING

Beat cream cheese until smooth. 
Add pumpkin puree, eggs, egg yolk, sour cream, sugar and all the spices. 
Add flour and vanilla. 
Beat together until well combined.

Pour into crust and spread evenly

Bake in oven for 1 hour
Turn off oven and crack oven door open, leaving pie in oven for 1/2 hour 
Remove from oven and let sit for 1/2 hour, then cover with plastic wrap and refrigerate for 4 hours.

Author J.D. Karns' Favorite Recipe

In honor of Veteran's Day, we proudly present to you our Historical Fiction author J.D. Karns, and want to thank WWII veteran Carl L. Young for serving this country to maintain its freedom and awesome way of life! 

Today we're featuring historical fiction author J.D. Karns' favorite recipe. To find out about his awesome WWII historical fiction based on the journal of WWII Navy veteran Carl L. Young visit 28 Months of Heaven and Hell

Tempting Tettrazini:

3 TBS butter

1 sweet onion – chopped

1 stalk of celery – diced

2 cups cooked chicken, pulled from bone and cut up OR 2 cups mixed vegetables: carrots, broccoli, yellow squash

6 oz dry spaghetti – broken up

1 can cream of mushroom soup

1 cup fresh mushrooms

½ cup parmsean cheese

2 1/3 cups chicken broth OR 2 1/3 cups vegetable broth

½ cup shredded mozzarella cheese

Melt butter in skillet and sauté onion and celery over low heat

Add remaining ingredients except for mozzarella cheese

Bring to boil, turn to low heat, and cook until spaghetti noodles are done

Sprinkle with mozzarella cheese and serve right from the skillet

Surviving NaNoWriMo

Participants are heading into the second week of NaNoWriMo (National Novel Writing Month) with novels

going full steam ahead. This second week a few who are in those early stages are still chugging strong. Those of us who are nearing that middle land of our novels are heading into rougher seas.

This is the part where the novel gets into the meat of the story and more twists and turns create conflict for our heroes and heroines to overcome. It even though we’re going full steam yet the story feels like it’s slowing and maybe even heading for a stall… Don’t worry it’s not going to slow down or stall out. You’re just starting to feel that first ping of, “What was I thinking signing up to write 50,000 words in only 30 days!” Or maybe, “My word count is so far behind I’ll never catch up!”

Don’t despair, you will survive, your novel will survive and you will make it to the finish line! Here are a few tips to help you do just that.

Getting wordy

Feel like your word count isn’t where it should be? Not a problem, start describing your scenes with all five of your senses, even if you edit part of it out later. You’ll be surprised how much your senses pick up in a room when you really think about it.

Kill someone off, seriously bump off a character or a new murder victim. Death is wordy. There is the death itself, discovery of the body, examination /investigation, informing loved ones, the funeral…. You can get a few pages out of a good killing.

Bag the lag

Feel like your just getting bogged down by your novel? Too many words too much deadline? You’re starting to feel that noveling lag. You’ve been going at it hot and heavy for a week now. It’s okay to shake it up and shake off that lag. (Anyone hear Taylor Swift singing there?)

Change your view and you’ll be surprised how even changing rooms can make you feel a bit refreshed. Getting out of the house and heading to the coffee shop or library is even better! My personal favorite is a local museum you’re surrounded by history and art. Talk about a fount of inspiration right at your finger tips!

Even changing your method for a few pages can help pick up pen and paper and go analog for a while.

Reward yourself

This is a big thing in NaNoWorld. Everyone jokes about their novel rewards. Seriously though, it really is important. Set goals daily, a word count, or page number. But not large goals make them small enough to do in a day or three max. Now, when you reach that goal give yourself a reward. Get your favorite latte, download a song you like, a hand full of candy kisses or maybe even a trip to the movies. Earning that reward no matter how small or large it is can give your self-conscious a boost and prove you can survive this.

I’m with ya Wrimos! Writing away and getting wordy with all these survival tips. My reward for reaching tonight’s word count goal is watching one of my favorite Russell Crowe movies Cinderella Man, with a cup of dark chocolate cocoa. What’s your goals and rewards?

Author Jean E. Lane's Favorite Recipe...

This week's recipe comes from JLBCP team member and Science "Faction" author, Jean E. Lane - creator of the Lill and Mewe Series

Our Favorite Deviled Eggs

Ingredients
1/2 cup mayonnaise
2 tablespoons 2% milk
1 teaspoon dried parsley flakes
1/2 teaspoon dill
1/2 teaspoon minced chives
1/2 teaspoon mustard (I use French’s Dijon)
1/4 teaspoon salt
1/4 teaspoon paprika
1/8 teaspoon pepper
12 hard-cooked eggs
Minced fresh parsley, additional paprika, olive slices


Directions:
In a small bowl, combine the first 9 ingredients. 
Slice eggs in half lengthwise; remove yolks and set whites aside. 
In another bowl, mash yolks; add to mayonnaise mixture, mixing well. 
Stuff or pipe filling into egg whites. 
Sprinkle with parsley and additional paprika, and garnish with an olive slice.
Refrigerate until serving.
Yield: 2 dozen
This recipe is easy, tastes great, and has been a Thanksgiving and Christmas tradition in our family for decades.

Today's Recipe: Punkin Soup

Hello fans and followers. For the month of November we are going to be featuring some of our authors' favorite recipes every Tuesday and Friday right here on the JLB Creatives Publishing Blog.

Today's recipe is from the cookbook, "More Than Grilled Cheese and Tomato Soup," one of two companion books to author Janet Beasley's Hidden Earth Series Volume 1 Maycly the Trilogy. This unique cookbook is filled with much more than recipes. In addition to the 300+ recipes it holds the menus and restaurant histories (including their owners) from the fantasy world of Maycly!

Janet has chosen to share the Punkin Soup recipe from the restaurant Two by Two 

2-1/4 lbs peeled pumpkin fresh, diced

Salted water

1 white onion, quartered

3/4 cup light cream (half & half)

1 tablespoon light olive oil

Salt and freshly ground black pepper

1/2 teaspoon nutmeg (garnish)

Garlic croutons (garnish)

1. Put onion and pumpkin in a large soup pot with enough salted water to cover. Cook slowly, letting it simmer for about 15 minutes. When tender, turn off heat.

2. Using a hand blender, puree` the pumpkin and onion in the pot until smooth. CAUTION: POT WILL BE HOT! Add cream and olive oil. Season with salt and pepper to taste.

3. Serve sprinkled with nutmeg and garlic croutons scattered over the top.

Tom tells her that she will soon find a job she can do well. Sydney sees a little girl named Sarah crying. Sarah tells her that she doesn’t know how to read her new book. Sydney decides to help her friend, but will she make a mess of this new job too?


Sydney Finds a Job is a cute little book that will make story time fun for small kids. Shari Todd and Thom Battisto introduce educational facts about this dog breed in a creative setting, so kids will learn about them while being amused by the story. The photos of the real Sydney are adorable. She lives with Thom Battisto and has a job visiting nursing homes, schools and libraries where kids can read to her. Sydney and Thom were praised for their work by First Lady Laura Bush.

About the Authors 

Thom Battisto was born in Chicago, Illinois, and raised in the Chicago suburbs. He is now a Florida resident and is a passionate advocate of animal rights. He has adopted several shelter dogs and has volunteered at a local shelter. Wanting to do even more, Thom and other supporters started the nonprofit organization called "Read to Sydney."


Shari Shaw Todd grew up in a small town that gave seed to big dreams of being an author. Co-writing this book with Mr. Battisto has helped her make two dreams come true: now she gets to be involved with kids and animals.

It's our CEO's favorite month - October. The colorful leaves, caramel apples, apple cider, bonfires, s'mores, camping, and so much more enchant this amazing month. To make it even more so enchanting, we wanted to let everyone know that this month we will be open for submissions.

We currently accept submissions for multiple genres, however we will be focusing on a few special ones during October. These particular genres will be the first to be considered between now and the end of the year.

Each Tuesday and Friday throughout October we are "calling" for submissions of certain genres. If you're an aspiring writer with a complete ms and have been looking at having your work considered for publication we encourage you to stay tuned to the JLBCP blog to see if your genre is one we're looking for during the month. If you are submitting in one of these genres your work will be moved to the top of the stack through the remainder of the year. 

Before you make a submission we require that you fully read all Submission Guidelines before doing so.

October Submissions Still Going - We're Looking For...

It's our CEO's favorite month - October. The colorful leaves, caramel apples, apple cider, bonfires, s'mores, camping, and so much more enchant this amazing month. To make it even more so enchanting, we wanted to let everyone know that this month we will be open for submissions.

About 28 Months of Heaven and Hell 
J.D. Karns' historical novel is based on the actual journal kept by Carl Lee Young while he served in the U.S. Navy during WWII aboard the escort vessel DE-416 USS Melvin R. Nawman. Karns has brilliantly woven Carl's journal entries together with fiction to create an entertaining, breathtaking, and highly factual account of the war from a sailor's point of view. 

Experience everything from the great typhoon of 1944 to Iwo Jima and Okinawa, and from the atom bomb to the signing of the treaty that ended the Second World War. It is an emotional roller coaster ride between the onboard action and the family back home. The realism of not only the war but also the era has been captured with expertise. In real life Carl's younger brother, Charles, longed to hear his big brother's WWII story. When Carl returned from the war he promised his little brother that someday he would tell him all about it. 

That day came recently when Charles began receiving journal entries from Carl via emails, totaling 168. Both Carl and Charles are excited to have their story turned into a historic novel. Both brothers are still living; they share the dream of holding a published copy of Carl's story in their hands before being called to Heaven. Carl resides in Arizona, and Charles resides in Florida. Both are still happily married and, through emails and phone calls, enjoy keeping each other informed of their day-to-day lives.

Absolutely loved this book!
While reading about Chester's decision to enlist and the hard times he went thru while serving, it also gave me the loving feeling that his little brother Jeb held for him. At home Jeb was the strong little soldier for his family, at war Chester was the strong soldier to battle thru the emotional sightes, smells and sounds. I cried over the changing relationship of father and son (priceless). Sue turns out to be a very smart women in making the decision on waiting for Chester to come home. ;)
